CELEBRITY CHEF SERIES
Starting in the Fall of 2011 the Peninsula Country Market started the 'Celebrity Chef Series', which was a big success ! Each Saturday a Chef prepared a delicious meal that 4 lucky customers enjoyed at the 'Chef's Table'. Being pampered never tasted so good ! Come out each Saturday to pick up cooking tips, great recipies, and wonderful menu ideas. The Chefs are from local establishments you are sure to know. Each week will be a different culinary experience ! We would like to thank the participating restaurants and encourage residents to try their establishments for a great meal or two. September 10th - Beacon Landing www.beaconlanding.ca Featured Chef - Miguel Goncalves - Born In Prince George, B.C. , Jose brings over 18 years of culinary experience to the Market. During his food journey, Jose spent 6 years training and working in downtown Vancouver at two very noteable restaurants; Star Anise and C Restaurant. Jose's food experience was further strengthened by his 2 years of extensive travel throughout southern Europe to wonderful culinary ports such as Portugal, Spain, France, and Italy. After spending 5 years in Jasper Alberta, he decided to bring his passion for cooking to Vancouver Island in May of 2011 September 17th - Roost Farm Bakery www.roostfarmcentre.com Featured Chef - Amaris Fisher is a born and raised Vancouver Islander, living in beautiful North Saanich BC. "I guess you could say my cooking lessons started with my dad, as soon as I was big enough to hold a wooden spoon" says Amaris. "I'm a proud to be adopted by two wonderful loving parents. My dad is Burmese (Myanmar, between India and China), and always had me involved with making family meals. I have to say that he's had the most influence on my perspective of cooking. Changing it from a nessesity to eat, to a creative outlet of self expression." Amaris attended the Proffessional Chef training program at Comosun College in 2000 and has since been working in the field. Amaris is currently the head chef/kitchen manager for the Roost, located at 9100 East Saanich Rd, in North Saanich.The Roost is one of the only places in Western Canada that grows their own grain, mills it on site & then uses this flour in their baking. Roost bread is baked fresh daily & is used to make their famous mile-high sandwiches. Over the past 2 years of operation we have built a great reputation for product quality, a simple but comfortable service style and creative interpretations of classic diner food. October 1st - RC GrillHouse www.rcgrillhouse.com Featured Chef - Born and raised in Victoria British Columbia, Chef Cory Stachowski has had a passion for the culinary arts all his life. From an early age in moms kitchen he took the next step going through the chefs training program at Spectrum High School. Cori was fortunate enough to start his apprenticeship with world renown chef Leo Shuster at the Aerie Resort. Leo took eager Chef Cory under his wing and worked him hard and taught him everything he knew, as a result Chef Cory was the first apprentice that graduated through The Aeries rigorous training program. Chef Cory finished at the top of his class through the Vancouver Vocational College's culinary arts program, which afterwards he moved east and found himself at The King Edward Hotel in Toronto. After a short stint back East he could hear the westcoast calling him and then decided he wanted to run something of his own so from there he traveled to the Queen Charlotte Islands as executive chef at The Westcoast Fishing Club on Langara Island. With that culinary passion still running through his heart and mind, he then decided it was time to travel and see what the world had to offer. He's visited places like: Jamaica, Greece, Grand Cayman, Portugal & Italy to name a few, absorbing whatever he could learn from a culinary perspective. Now back in Victoria it was time for the next step that he's wanted his whole life, his own restaurant ! To do this he paired up with his wife Mia and business partner Rick Peters to open RC Grillhouse n Lounge. Together the three of them feed off of each others knowledge and run a successful business with a mutual vision of what they want, and have become one of the best of the Peninsula. With a focus on what the Peninsula has to offer and an emphasis on going as local as possible, Chef Cory believes that cooking comes from the heart not necessarily a book on the shelf. October 8th - Haro's at Sidney Pier Hotel - www.sidneypier.com Featured Chef - Chef Sheena Hogan is one of many Canadian women making her mark on the Vancouver Island scene. Coming from a family of celebrated chefs has provided her with the right upbringing for a girl who has always loved food. Growing up mainly in Southern Ontario, Sheena started her culinary journey at a very young age. She found her passion for the kitchen while enrolled in a high school co-op at a local restaurant in St. Catharines. She pursued her dream by attending Niagara College for Culinary Management, in turn earning her Red Seal. Experiences at well-known Ontario eateries afforded her the chance to work with some culinary icons, such as Jamie Kennedy who helped shape her cooking style. A bit of a country girl at heart, Sheena spent some time working as a chef at a guest ranch in the interior of BC, and realized she had found her new home in the beautiful province. She began working as a Junior Sous Chef at Haro’s in the Sidney Pier Hotel & Spa shortly after its opening. She has been leading their culinary brigade as Executive Chef since 2010. Sheena’s love of fresh food and the importance of having a connection to where it’s from,has helped her develop an honest cooking style. Her simplistic attitude towards flavours and sticking to her roots, allows her to create dishes that speak to home. See you at the Market !
